Jun Brewing Workshop: The Champagne of Kombucha

Often called the “champagne of kombucha,” Jun is a light, delicate, and naturally effervescent fermented tea made with honey instead of white sugar. It ferments faster than traditional kombucha and delivers a smoother, brighter flavour—making it a favourite among fermentation lovers and beginners alike.

In this hands-on Jun brewing workshop, you’ll learn everything you need to confidently brew Jun at home, from your very first batch to long-term maintenance.

In this workshop, you’ll learn:

  • A brief history of kombucha and how Jun differs

  • The key components of Jun and how beneficial bacteria and yeast work together

  • Step-by-step instructions for brewing a batch of Jun

  • How to flavour and bottle your Jun for optimal taste and fizz

  • How to maintain a SCOBY hotel and set up continuous brewing

Throughout the workshop, you’ll enjoy a guided Jun tasting featuring a variety of flavours, giving you inspiration for your own creations.
